I Made Epicure's Chop Chop Salad and It Didn't Taste How I Thought It Would

Surprises come in small packages and this mystery salad mix is no exception.

It was only last year that Epicure came into my life. Thanks to a friend at work who invited me to an Epicure party that she was hosting in her home. It was only then that I learnt Epicure is 100% nut free AND gluten free. What the heck? I've had a nut allergy my whole life and I've been gluten free going on two years now. I had heard a little bit about Epicure in the past, being known for their dips and mixes. Now I can see why. After sampling an array of dishes and placing an order in their catalogue, I was hooked. I loved the concept of how easy and accessible meals and food favourites were to make, without missing the addition of nuts or gluten.


Fast forward a few months later I hosted my own party in my home and it was a blast. I love hosting folks, Add food into the mix? I'm in heaven. I placed an order for a few random things, as did my mom who was there. Only last weekend, my mom gifted me a few Epicure products that she had purchased for me to try. We both ensured that we ordered things we hadn't tried in an effort to have some fun and try something new. Mom gifted me Epicure's Chop Chop Salad dressing and I've been saving it for a light and tasty meal craving. With it being April and the sun on full display, today was the day.


I was impressed with how easy the actual salad dressing itself was to make. Epicure bag mix plus honey mustard and olive oil, that's it! As always, you'd adjust the ratio of ingredients to preferred flavour, strength and consistency. Now I didn't have all of the ingredients suggested to make the salad itself, but pretty close to it. The salad calls for:


CHOP CHOP SALAD

Chicken, Corn, Bell Peppers, Chickpeas, Crumbled Feta, Romaine Lettuce


I had: leftover grilled chicken and bell peppers from two days before, a can of corn in the pantry and half a head of iceberg lettuce.



As many people do, I read the ingredients for the dressing mix on the back of the package, but for the life of me I couldn't figure out what flavour the dressing was going to be. I had no clue! Once I mixed everything together, the flavour was all too familiar with an extra little twist. I loved it! It got me thinking what else I could use this flavour for. A cold pasta salad or a marinade for chicken and steak. The opportunities could be endless.


Now I could tell you what the flavour was, but where would the fun in that be? What I can guarantee, is that Epicure's Chop Chop Salad dressing didn't taste anything like I thought it would, it tasted even better and I would certainly make it again.
